But when the woman returned on Wednesday at 4am, she drove 'at a fast rate of speed' through the Chandlers Creek checkpoint.
She was not caught until an off-duty cop recognised the Volkswagen Passat station wagon travelling towards South Australia on the other side of the state.
The car was spotted near the town of Nhill in western Victoria about 5pm on Wednesday and finally brought to a stop.
Officers used a tyre deflation device to stop the vehicle on the Western highway.
The Central Coast resident was later arrested and taken to hotel quarantine.
The woman is expected to be charged with conduct endangering life, failing to stop on police direction and contravening chief health officer directions.
