Dementia UK celebrity tea party: Phyliss Logan's chocolate brownies


The actress says, ‘Brownies might sound boring but these are really scrummy, and it’s a very easy recipe I’ve used for years. Mum, who had dementia, really enjoyed eating them.’


Phyliss Logan's chocolate brownies



Serves 12-16


INGREDIENTS


150g (5½oz) margarine

4tbsp Bournville cocoa powder

150g (5½oz) caster or soft brown sugar

2 eggs

50g (1¾oz) self-raising flour, sieved

50g (1¾oz) walnuts, chopped

18cm (6¾in) square cake tin, greased and base lined




METHOD


Preheat the oven to 180°C/fan 160°C/gas 4. Melt a third of the margarine in a pan, stir in the cocoa and set aside. Cream the remaining margarine with the sugar until lighter in colour, then gradually beat in the eggs. Fold in the sieved flour, then the chopped walnuts and the cocoa mixture. Turn into the prepared tin, smooth the surface and bake for 45-50 minutes until cooked. Cool in the tin then turn out and cut into squares. Dust with a little icing sugar before serving.
