INGREDIENTS

500g beef, braising steak, lean, raw, cut into chunks
2 large onion, all types, sliced
3 stick(s) celery, cooked, chopped
2 medium carrots, old, raw, sliced
2 cube(s) stock cube, vegetable, beef, dissolved in 300ml (1/2 pint) hot water
568ml guinness original, (1 pint)
175g mushrooms, sliced
2 sprig(s) (fresh) parsley, fresh
1 teaspoons (level) thyme, dried, dried
450g potatoes, old, raw, peeled and cut into chunks
1 pinch salt
1/8 teaspoons (ground) pepper, black (whole, cracked or ground)
METHOD
Preheat oven to Gas Mark 4/180°C/fan oven 160°C/350°F.
Spray a large flameproof casserole dish with low fat cooking spray and place over a high heat. Add the beef a handful at a time, so that it seals and browns. Add the onions, celery and carrots and cook over a medium heat for 3-4 minutes.
Add the stock, Guinness, mushrooms, parsley and thyme. Season. Bring up to the boil, then cover and transfer to the oven. Cook for 1½ hours.
Add the potatoes. Cover and cook for another 30 minutes, or until the potatoes are done and the meat is tender.
